*** Ian,Mode 2 is the accepted system here in the UK and has proved itself in terms of model ergonomics,you are quite correct the throttle and collective stick needs to be on the left,the rudder ( tail rotor ) is also on the left stick with the ailerons ( rotor head tilt ) and elevator ( forward and back ) positioned on the right stick.
Most model training schools use and encourage Mode 2 and this works out fine for full sized pilots to co-ordinate their controls in both spheres.
