A semi-gloss finish as Richard says will look scale polished. Full gloss would look unrealistic on upholstery and dash but semi-gloss will look the part.

You can even mix gloss and matt paints to achieve the exact level of semi-gloss you are after. I would paint a sample patch and wait until it is dry before deciding.
